It’s official, we have a blog! And of course we’re throwing a party to celebrate!

In the wise words of Julia Child “a party without cake is just a meeting”, and another meeting is the last thing any of us wants. So we whipped up one of these scrumptious popcorn cakes.

We were first introduced to this ooey gooey deliciousness over at Cookies & Cups.  If you’ve never tried a popcorn cake before, drop everything and make yourself one immediately. Trust us. They are THAT good.

Here’s what we included in ours:

  • 2 cups of popcorn kernels popped (approx. 6 cups) OR 2 bags of microwave popcorn
  • 1/2 cup butter
  • 1 bag mini marshmallows (8 oz. or approx. 4 cups)
  • 1 cup m&ms (but you can use smarties, reese’s pieces, jujubes, really any candy you want)
  • 1 cup butterscotch chips
  • 2 cups pretzel sticks broken into smaller pieces

We have made these before and found that 8 cups of marshmallows makes it too sweet for our taste. We use half of that and it always stays together nicely and has just the right amount of sweetness.
